WHere is a simplified version of a drink found on a new cocktail list. It's a party-sized prepared mix that is bursting with essence of a festive period, rendering it ideal for hosting a celebration. Reserve the remaining citrus syrup you can use for brunch beverages, sweets, or for another batch of the drink.
Bikini Recipe
Serves 10 servings
To make the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Drink (produces 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Cordial: Place every components into a pan, heat until it reaches a light boil, stirring so the sugar melts. Then, take off the heat and let it to reach room temperature completely. Decant to a sterilised bottle, seal and refrigerate it chilled, it will last for up to one month.
To make Batch Mix: Pour the specified liquids into one big jug, leave to sit for 60 minutes, then filter it , ideally through cheesecloth, so it's fully clarified.
When ready to serve: Pour 85ml of the batch mix to a stirring glass containing ice, and stir lightly for one minute until cold. Strain into an frosted cocktail glass or similar, decorate with the cranberries adding the final touch using a light spray of the essential oil above the glass.
